Veggie Pinwheels: Perfect for School Lunches
With the new school year upon us, you may be scrambling for healthy, easy lunch ideas for the kids (or maybe yourself). Try these colorful pinwheels packed with protein and veggies.
4 large tortillas (we like using spinach or sun-dried tomato tortillas)
2/3 c. whipped cream cheese (save calories & fat by using a reduced fat version)
1 Tbsp. dry ranch powder
½ c. sliced red bell peppers
½ c. sliced yellow bell peppers
½ c. sliced carrots strips
½ c. shredded purple cabbage
½ c. baby spinach leaves
1 c. shredded cooked chicken (save time by using a rotisserie chicken!)
Stir cream cheese and ranch powder until combined. Spread cream cheese mixture evenly over tortillas leaving an inch border all the way around. Place the vegetables in equal rows across the tortillas. Add chicken. Snugly roll each tortilla and cut crosswise into pinwheels.
Makes (4) servings. Make this meal complete by adding a side of fresh fruit and cup of low-fat milk.
